Vegan Challah and Banana Scoops

Vegan Challah and Vanilla Nice Cream
We decided to veganise this traditional Jewish recipe and we are so glad we did! Challah may be rather time-consuming to make but, trust us, it's definitely worth it and the process is therapeutic too. This challah plus Banilla Banana Scoops is truly a match made in heaven. 
  • 1 tbsp yeast
  • 250ml lukewarm water
  • 8tbsps plant-based yoghurt (beaten)
  • 1/2 tsp salt
  • 50g sugar
  • 63 ml vegetable oil (plus extra for drizzling)
  • 650g plain flour (plus extra for dusting)
  • 3 tbsp golden syrup
  • 2 scoops of Banilla Banana Scoops to serve (we also added chopped pear, golden syrup and a dusting of icing sugar to ours - absolutely delicious!)
1) Drop 1tbsp of yeast into the lukewarm water and mix well. Leave for 10 minutes until frothy.
2) In a large bowl, add the salt, sugar and oil to the yoghurt and beat well.
3) Add in the frothy yeast mixture and mix well.
4) Gradually add in the flour, mixing well with a wooden spoon.
5) Knead the dough for 15 minutes. If the dough gets too sticky, add in more flour. The end result should be a lovely, elastic dough.
6) Drizzle some oil into the bowl and turn the dough so that it's fully greased.
7) Cover the bowl with clingfilm and leave to prove for 3+ hours.
8) Punch the air out of the dough and knead for a little while.
9) Slice the dough in two to form two loaves.
10) Divide each loaf into 3.
11) Roll the pieces into a long sausage shape. Pinch the ends of the three strands together securely and plat them together. Do the same with the second loaf.
12) Place the loaves on a baking tray with well-oiled baking parchment and leave to rise for at least an hour.
13) Preheat the oven to 180 °C
14) Mix the golden syrup with a generous splash of warm water.
15) Coat the loaves with the golden syrup mixture.
16) Bake for 30-40 minutes until the loaves are a lovely golden brown and make a hollow sound when you tap the bottom of them.
17) Top with Banilla Banana Scoops (plus your choice of topping) and enjoy!!
